Herbed Skirt Steak

Serves: 4 servings

An easy entree for the grill. I like to plan for leftovers so I have a delicious lunch of salad and steak the next day.
  • 2 tablespoons finely chopped fresh thyme
  • 1 tablespoon finely chopped fresh oregano
  • 1½ pounds skirt steak
  • 2 tablespoons extra virgin olive oil
  • salt and pepper
  1. In a small bowl, combine the chopped thyme and oregano. Add a generous pinch of salt and pepper, and mix to combine.
  2. Massage the olive oil into the steak. Sprinkle and press the seasoning mixture into the steak.
  3. Refrigerate for 2-6 hours.
  4. Remove the steak from the fridge 30 minutes before before cooking.
  5. Heat a grill or grill pan to medium-high heat. Grill about 3 minutes per side for medium.
  6. Let the steak rest about 10 minutes before service.
