Easy Baked Salmon
You can experiment with adding various vegetables and fresh herbs--like grape tomatoes, olives and fresh basil--to the salmon packets before baking.
  • 2 6 oz. wild salmon fillets (boneless, skinless)
  • 2 cloves garlic, minced
  • 1 Tbsp fresh parsley chopped
  • 6 Tbsp extra virgin olive oil
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp pepper
  • unbleached parchment paper
  1. In a medium glass bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper, lemon juice and parsley.
  2. Place salmon fillets in a medium glass baking dish, and cover with the marinade.
  3. Marinate in the refrigerator about 1 hour, turning occasionally.
  4. Preheat oven to 375 degrees F.
  5. Place fillets on a generous sheet of parchment paper and cover the salmon with marinade.
  6. Fold the parchment paper so that the edges line up. Roll up the edges of parchment paper so that the salmon is sealed in a little packet.
  7. Place the sealed salmon in the glass dish.
  8. Bake 35 to 45 minutes, until easily flaked with a fork.
